THE RESTAURANT
The story of La Sosta del Cavaliere began in 2012, when Leonardo Fiorenzani took over the premises of an old barn in the village of Torri, near Sovicille. After a careful renovation of both the building and its outdoor spaces, the restaurant evolved in 2019 towards a more refined and elegant author’s cuisine, embracing the concepts of modern fine dining. The interiors and the surrounding garden mirror an emotional style of cooking, capable of expressing all the many shades of chef Leonardo Fiorenzani’s vibrant personality. The culinary art of La Sosta del Cavaliere embodies contemporary lifestyles and themes such as environmental awareness, sustainability and green energy – values that translate into excellence and identity, offering guests a truly unique experience.

Leonardo Fiorenzani has an unusual story – one marked by talent, passion, and determination. Shaped by the discipline and dedication gained as a promising javelin athlete, he turned to cooking after a sports injury ended his athletic career. The kitchen became his refuge and his rebirth, leading him into a new dimension. With perseverance, awareness and an ever-curious spirit, he never stopped experimenting and setting new goals. His rise was swift: he soon established himself on the national scene, becoming one of the Ambasciatori del Gusto and, in
2024, launching “Gusto Lovers”. He was named by Forbes Italia among the 100 most innovative restaurateurs of 2025, earned 2 Forks from Gambero Rosso, was listed in the Identità Golose 2025 guide, and recognised by leading Italian food critics as one of the “revelation chefs of 2025”. In April 2025, he joined the JRE-Jeunes Restaurateurs family, and in June of the same year began a collaboration as chef for San Pellegrino. La Sosta del Cavaliere was awarded the 2025 Forchettiere Award as Best Restaurant in Tuscany. The venue also doubles as an art gallery, featuring periodic exhibitions by established national and international artists both inside and outside the restaurant.
A JOURNEY THROUGH FLAVOUR
This culinary journey begins with a deep bond with local ingredients – many of them grown directly in the garden adjoining the restaurant. Menus and tasting experiences evolve with the seasons, shaped by meticulous work with aromatic herbs and by the influences gathered from the chef’s travels around the world in search of new flavours and combinations. Everything is made in-house, from the bakery to the petit pâtisserie. Among the signature dishes stand out the “Risotto e Laguna”, the “Gorgonzola Ice Cream”, and the “Cinta in Onion and Whisky”. Each bite is a discovery for refined palates, completed by the grace and professionalism of sommelier Michela Bigio – life partner and accomplice in a shared success that follows the trends of international fine dining. She welcomes guests in the dining room and offers the perfect pairing of wines and cocktails. Family remains ever-present in the background – starting from chef Leonardo Fiorenzani’s grandmother, whose cooking played a pivotal role in his journey, deeply rooted in his
origins.
