MICHELIN Guide Switzerland to unveil its 2021 selection of restaurants on February 2
On February 2, the MICHELIN Guide Switzerland will unveil the full list of restaurants it has selected and awarded one or more Stars, a Bib Gourmand or a MICHELIN Plate.
Due to the current health situation, this announcement cannot be made at an in-person event, but will be relayed on the MICHELIN Guide’s digital platforms.
The MICHELIN
Guide Switzerland 2021 selection will be available exclusively in digital format and will offer enhanced content to users via the MICHELIN Guide app and on its website: guide.michelin.com.
“Despite the unprecedented crisis affecting the restaurant world, the Swiss culinary scene has demonstrated a high level of commitment, energy and creativity. Keeping in mind the level of expertise that our readers expect in our recommendations, our inspectors have assiduously continued their restaurant visits and been highly impressed by the recipes they’ve discovered” said Gwendal Poullennec, International Director of the MICHELIN Guides.
The decision to launch an exclusively digital guide has allowed Michelin’s teams of inspectors to adapt and be in the field at all times for an extended period, without sacrificing the methodology that has defined the MICHELIN Guide for 120 years.
20 New Stars Shine Over Switzerland
With 6 new two-star restaurants and 12 new one-star establishments, the MICHELIN Guide Switzerland 2020 is launched today, and this brings the total of restaurants in the country that have now been awarded one or more MICHELIN stars to 122.
Switzerland is once again confirmed as a paradise for gourmets. And for the first time, the Michelin Star Revelation ceremony lands in Ticino, where the city of Lugano welcomed over 400 guests.
Speaking about the 2020 selection, Gwendal Poullennec, International Director of the MICHELIN Guides, commented: “The excellent and varied cuisine on offer in Switzerland can be found all over the country, from Zurich to Lugano, and from St. Gallen to Lake Geneva. And this is not the first time that our selection is a clear confirmation of the very high standard of Swiss gastronomy, as it has been steadily rising for years.”
A major feature this year are two restaurants that have entered the MICHELIN Guide Switzerland and immediately been awarded two stars. The Maison Wenger in Le Noirmont (JU), which Jérémy Desbraux took over only last year, and Memories in the Hotel Grand Resort in Bad Ragaz (SG) with Sven Wassmer as head chef – incidentally this is the second two-star restaurant in the hotel.
The IGNIV by Andreas Caminada restaurants in both Bad Ragaz (head chef Silvio Germann) and Sankt Moritz (head chef Marcel Skibba) have moved up into the two-star category, and the focus here is on sharing. This trend, in which guests share dishes, is enjoying great popularity. Also in Sankt Moritz (GR), Da Vittorio, under the management of Enrico Cerea and Paolo Rato, has now been awarded two stars. Furthermore, Gasthaus Zur Fernsicht – Incantare in Heiden (AR), with Tobias Funke as head chef Martin Weber, has also been awarded a second star. Overall, the number of two-star restaurants has now increased to 22.
The three restaurants that already held three MICHELIN stars maintain these distinctions for 2020 and remain at the forefront of Swiss gastronomy: Restaurant de l’Hôtel de Ville in Crissier (VD), Schloss Schauenstein in Fürstenau (GR) and the Cheval Blanc by Peter Knogl in Basel (BS).
With 12 new one-star additions this year, the total number of establishments with this distinction tha are recommended in the MICHELIN Guide Switzerland is now 97. In Geneva and Berne, two establishments each received a new star. In Berne (BE) these are the restaurants Steinhalle and Zum Äusseren Stand, and in Geneva (GE) the restaurants L’Aparté and Fiskebar. Another star was awarded to the restaurant SENS 1605 in Davos (GR) led by chef Jeroen Achtien, whose restaurant Sens in Vitznau (LU) received a MICHELIN star last year. Other newly awarded one-star restaurants are Le 42 in Champéry (VS), Le Pérolles in Fribourg (FR), Chesa Stüva Colani in Madulain (GR), Zum Löwen in Nänikon* (ZH), Jägerhof in Sankt Gallen (SG), dasRestaurant in Thun (BE), La Table d’Adrien in Verbier (VS) and finally the restaurant 1904 Designed by Lagonda in Zurich (ZH).
Michelin continues to promote the restaurant industry through four special awards. Marie Robert, chef of the Café Suisse, receives the MICHELIN Young Chef Award 2020 sponsored by BlancPain. Through her passion and commitment she is creating a quite feminine, sometimes cheeky, modern and very creative cuisine which is very detailed yet never losing sight of the products.
Marc ALMERT receives the MICHELIN Sommelier Award sponsored by Swiss Wine for his remarkable work at the Pavillon in Zurich. This enthusiast marvellously combines wines with the creations of chefs and accompanies customers with his services completing an exceptional culinary experience.
Ruth WIGET-KEISER works with passion at the two starred restaurant Adelboden in Steinen. During a subtle and charming service, she discreetly and elegantly weaves unique bonds with her clients through a memorable dining experience, and this year receives the MICHELIN Service Award 2020 sponsored by Pernod Ricard Swiss.
Last but not least, Andreas CAMINADA receives the MICHELIN Mentor Award sponsored by Sprüngli this year. His role as trainer and developer of gastronomic concepts, while always looking for talent, has today led to an equally exceptional result as three of his disciples can now boast two MICHELIN stars.
The number of Bib Gourmand establishments in Switzerland is a reflection of the vibrancy and variation of the Swiss gastronomic scene, and among the 143 restaurants listed in the Guide there are 15 new additions. This award, represented by the face of the Michelin Man “Bibendum”, who licks his lips with relish, recommends restaurants that offer carefully prepared meals that are particularly good value for money. A three-course meal (starter, main course and dessert) is available for a maximum of 70 Swiss francs.
Also new in the MICHELIN Guide Switzerland 2020 are longer descriptive texts for one-star restaurants. The previous edition of the MICHELIN Guide presented the two- and three-star restaurants with longer descriptions, and now the establishments awarded one star are also presented in more detail. This offers readers more in-depth information about the cooking style, philosophy, atmosphere and specialties of these restaurants.
The MICHELIN Guide Switzerland 2020 will be available from 27 February at a price of 39 Swiss francs (29.95 euros in Germany and 30.80 euros in Austria). This latest edition recommends a total of 632 restaurants and 215 hotels, and the dining establishments recommended by the MICHELIN Guide ranges from country inns to gourmet restaurants.

20 Nouvelles Étoiles brillent au-dessus de la Suisse
Avec 6 nouveaux restaurants deux étoiles et 12 nouveaux établissements une étoile, le Guide MICHELIN Suisse 2020 sort aujourd’hui et porte à 122 le nombre total de restaurants du pays ayant obtenu une ou plusieurs étoiles MICHELIN.
La Suisse s’affirme encore une fois comme un paradis pour les gourmets. Et pour la première fois, la cérémonie Michelin Star Revelation a eu lieu au Tessin, où la ville de Lugano
a accueilli plus de 400 invités.
A propos de la sélection 2020, Gwendal Poullennec, Directeur International des Guides MICHELIN, a commenté : “La cuisine excellente et variée proposée en Suisse se retrouve dans tout le pays, de Zurich à Lugano, et de Saint-Gall au lac Léman. Et ce n’est pas la première fois que notre sélection confirme clairement le très haut niveau de la gastronomie suisse, qui est en constante augmentation depuis des années”.
Une importante caractéristique de cette année sont deux restaurants qui font leur entrée dans le Guide MICHELIN Suisse et ont immédiatement obtenu deux étoiles. La Maison Wenger à Le Noirmont (JU), que Jérémy Desbraux a repris l’année dernière seulement, et Memories à l’hôtel Grand Resort de Bad Ragaz (SG) avec Sven Wassmer comme chef de cuisine – il s’agit d’ailleurs du deuxième restaurant deux étoiles de l’hôtel.
Les restaurants IGNIV by Andreas Caminada à Bad Ragaz (chef de cuisine Silvio Germann) et à Saint-Moritz (chef de cuisine Marcel Skibba) sont passés dans la catégorie deux étoiles, et l’accent est mis ici sur le partage. Cette tendance, où les clients partagent les plats, jouit d’une grande popularité. Toujours à Saint-Moritz (GR), Da Vittorio, sous la direction d’Enrico Cerea et de Paolo Rato, obtient deux étoiles. En outre, Gasthaus Zur Fernsicht – Incantare à Heiden (AR), avec Tobias Funke comme chef de cuisine a également reçu une deuxième étoile. Au total, le nombre de restaurants deux étoiles est passé à 22.
Les trois restaurants qui détenaient déjà trois étoiles MICHELIN conservent ces distinctions en 2020 et restent à la pointe de la gastronomie suisse : Restaurant de l’Hôtel de Ville à Crissier (VD), Schloss Schauenstein à Fürstenau (GR) et le Cheval Blanc by Peter Knogl à Bâle (BS).
Avec 12 nouvelles étoiles cette année, le nombre total d’établissements avec cette distinction qui sont recommandés par le Guide MICHELIN Suisse est maintenant de 97. A Genève et à Berne, deux établissements ont reçu chacun une nouvelle étoile. À Berne (BE), il s’agit des restaurants Steinhalle et Zum Äusseren Stand, et à Genève (GE), des restaurants L’Aparté et Fiskebar. Une autre étoile a été décernée au restaurant SENS 1605 à Davos (GR) dirigé par le chef Jeroen Achtien, dont le restaurant Sens à Vitznau (LU) a reçu une étoile MICHELIN l’année dernière. Les autres restaurants nouvellement récompensés d’une étoile sont Le 42 à Champéry (VS), Le Pérolles à Fribourg (FR), Chesa Stüva Colani à Madulain (GR), Zum Löwen à Nänikon* (ZH), Jägerhof à Saint-Gall (SG), dasRestaurant à Thun (BE), La Table d’Adrien à Verbier (VS) et enfin le restaurant 1904 Designed by Lagonda à Zurich (ZH).
Michelin continue de promouvoir le secteur de la restauration en décernant quatre prix spéciaux. Marie Robert, chef du Café de Suisse, reçoit le MICHELIN Young Chef Award 2020 sponsorisé par BlancPain. Par sa passion et son engagement, elle crée une cuisine très féminine, parfois effrontée, moderne et très créative, qui est très détaillée sans jamais perdre de vue les produits.
Marc ALMERT reçoit le MICHELIN Sommelier Award sponsorisé par Swiss Wine pour son travail remarquable au Pavillon de Zurich. Ce passionné marie à merveille les vins aux créations des chefs et accompagne les clients avec ses services, complétant ainsi une expérience culinaire exceptionnelle. Ruth WIGET-KEISER travaille avec passion à l’Adelboden à Berne. Au cours d’un service subtil et charmant, elle tisse discrètement et élégamment des liens uniques avec la clientèle à travers une expérience gastronomique mémorable. Cette année, elle reçoit le MICHELIN Service Award 2020 sponsorisé par Pernod Ricard Swiss.
Dernier point, mais non des moindres, Andreas CAMINADA reçoit cette année le MICHELIN Mentor Award sponsorisé par Sprüngli. Son rôle de formateur et de développeur de concepts gastronomiques, tout en étant toujours à la recherche de talents, a aujourd’hui conduit à un résultat tout aussi exceptionnel puisque trois de ses disciples peuvent désormais s’enorgueillir de deux étoiles MICHELIN.
Le nombre d’établissements Bib Gourmand en Suisse reflète le dynamisme et la diversité de la scène gastronomique helvétique. Parmi les 143 restaurants répertoriés dans le Guide, 15 nouveaux établissements ont été ajoutés. Ce prix représenté par le visage du célèbre bonhomme Michelin « Bibendum », qui se lèche les lèvres avec délectation, recommande les restaurants qui proposent des plats préparés avec soin et présentant un rapport qualité-prix particulièrement intéressant. Un repas de trois plats (entrée, plat principal et dessert) est proposé pour un maximum de 70 francs suisses.
Le Guide MICHELIN Suisse 2020 comporte également des textes descriptifs plus longs pour les restaurants une étoile. L’édition précédente du guide MICHELIN présentait les restaurants deux et trois étoiles avec des descriptions plus longues. Désormais, les établissements ayant obtenu une étoile sont également présentés de manière plus détaillée. Les lecteurs y trouveront des informations plus approfondies sur le style de cuisine, la philosophie, l’atmosphère et les spécialités de ces restaurants.
Le Guide MICHELIN Suisse 2020 sera disponible à partir du 27 février au prix de 39 francs suisses (29.95 euros en Allemagne et 30.80 euros en Autriche). Cette dernière édition recommande un total de 632 restaurants et 215 hôtels. Les établissements de restauration recommandés par le Guide MICHELIN vont des auberges de campagne aux restaurants gastronomiques.

Con 6 nuovi ristoranti a due stelle e 12 nuovi locali a una stella, la Guida MICHELIN Svizzera 2020 è stata presentata, portando così a 122 il totale dei ristoranti del paese che hanno ottenuto una o più stelle MICHELIN.
La Svizzera si conferma ancora una volta un paradiso per i buongustai. E per la prima volta la cerimonia della Michelin Star Revelation approda in Ticino, dove la città di Lugano ha accolto oltre 400 ospiti. Parlando della selezione 2020, Gwendal Poullennec, Direttore Internazionale delle Guide MICHELIN, ha commentato: “L’eccellente e variegata offerta gastronomica della Svizzera si trova in tutto il Paese, da Zurigo a Lugano, da San Gallo al Lago di Ginevra. E non è la prima volta che la nostra selezione è una chiara conferma dell’altissimo livello della gastronomia svizzera, che da anni è in costante crescita”.Quest’anno è importante sottolineare che sono due i ristoranti che sono entratinella Guida MICHELIN Svizzera e si sono subito aggiudicati due stelle. La precedente edizione della Guida MICHELIN ha presentato i ristoranti a due e tre stelle con descrizioni più lunghe, e ora anche i locali premiati con una stella sono descritti più dettagliatamente. In questo modo i lettori possono informarsi in maniera più approfondita sullo stile di cucina, la filosofia, l’atmosfera e le specialità di questi ristoranti. La Guida MICHELIN Svizzera 2020 sarà disponibile dal 27 febbraio al prezzo di 39 franchi svizzeri (29.95 euro in Germania e 30.80 in Austria). The MICHELIN Guide Switzerland 2020 to be revealed in Lugano
For the second year running, the Michelin Guide has chosen to reveal its selection of Swiss restaurants – and notably the names of the starred establishments that will appear in the 2020 edition– at a special “Michelin Guide Switzerland Star Revelation gala”. Lugano has been chosen as the country’s gastronomic capital for the occasion that will see the Confederation’s foremost chefs, media and laureats join Michelin Guide executives at LAC Lugano Arte e Cultura, the cultural centre of Lugano on February 24, 2020.
“Lugano’s lakeside setting, nearby mountains and mild climate have made it an exceptional terroir for the local produce. Thanks to this, the city and region are a natural hub of European gastronomy, as well as a privileged location for chefs and all those who appreciate fine cuisine”, appreciates Gwendal Poullennec, International Director of the Michelin guides. “The dual Swiss-Italian culture enjoyed by Lugano and the canton of Ticino has seen the region flourish as a major cultural and gastronomic crossroads where irresistible flavours and aromas blend so deliciously. As a favourite destination for tourists, the region has plenty to attract gourmets, including wonderful charcuterie and the many species of fish that abound in its rivers and lakes. If only for these reasons, it stands out as the ideal venue for the presentation of the Michelin Guide Switzerland 2020”, adds Gwendal Poullennec.

New MICHELIN stars shining over Switzerland
Two new 2 star restaurants for 2019
The MICHELIN Guide Switzerland 2019 is launched today and Swiss gastronomy has two new shooting stars. With their straightforward and modern style of cooking, Patrick Mahler and his team from restaurant focus in Vitznau have made it straight from zero to 2 stars. The second new addition with 2 stars in Switzerland is the restaurant Pavillon with chef Laurent Eperon, situated at the Zurich-based hotel Baur au Lac.
The MICHELIN Guide Switzerland 2019 lists a total of 128 starred restaurants – more than ever before. The three restaurants recommended with 3 stars in last year’s edition have confirmed their ranking and continue to represent Switzerland’s crème de la crème: the Restaurant de l’Hôtel de Ville in Crissier, Schauenstein in Fürstenau and Cheval Blanc by Peter Knogl in Basel.
Commenting on this year’s guide, Gwendal Poullennec, International Director of the MICHELIN guides, said: “The number of stars this year is proof of the high level and overall quality of Swiss gastronomy. Our inspectors were very pleased to discover, and are very happy to share with our readers, an impressive variety of culinary styles, ranging from classic to modern and from Mediterranean to Asian cuisine”.
Together with focus and Pavillon, the total number of 2 star restaurants in Switzerland has risen to 20. For the first time, the MICHELIN guide recognises more than 100 restaurants with 1 star, with 105 in total. They are spread all over the country and among them are 21 that have gained a star for the first time. With this geographical spread in mind, foodies only have to travel short distances in order to get to a restaurant recommended by the MICHELIN Guide, and this is a pretty unique feature of the Swiss culinary scene.
This year sees three restaurants with female chefs gaining their first Michelin star: L’Etoile – Nova (Alexandra Ziörjen) in Charmey, Neue Blumenau (Bernadette Lisibach) in Lömmenschwil, and Le Café Suisse (Marie Robert) in Bex.
Among the other restaurants newly distinguished with 1 Michelin star is the K by Tim Raue. It is based at the legendary Hotel Kulm in St. Moritz, heavily influenced by Asian cooking, and run by the well-known chef from Berlin. Situated above Lake Lucerne and opened in 2018, after 9 years of construction, the Bürgenstock Resort in Obbürgen marks the most spectacular hotel opening of the year in Switzerland. Among its four hotels and multitude of restaurants is Ritzcoffier which the Michelin inspectors have immediately distinguished with 1 star.
A premiere in the MICHELIN Guide Switzerland, the restaurant Le Berceau des Sens which belongs to the École hôtelière de Lausanne is awarded 1 Michelin star. It is the first time in Switzerland that the restaurant of a school for hotel and gastronomy management has received such an accolade. The restaurant Belvoirpark, which belongs to another school Hotelfachschule Zürich, receives a Bib Gourmand for its outstanding value-for-money offer. Both awards confirm the excellent level of professional training in Switzerland, which fuels top-level Swiss gastronomy by helping to provide a new generation of well trained, motivated, and mostly young chefs.
Vitznau, based in an idyllic bay of Lake Lucerne, is evolving into a rewarding destination for gourmets. The village, at the foot of the Rigi, now boasts no less than three starred restaurants: focus (2 stars), Sens (1 star), and PRISMA (1 star). And there are more acclaimed restaurants nearby in the surrounding area.
Around 15 years ago, from 2002-2005, Zurich had no starred restaurants. Now the city boasts three 2 star restaurants and seven 1 star restaurants, three of which have joined the Michelin family in the 2019 edition: Gustav, Ornellaia and 20/20 by Mövenpick.
Still going strong in Swiss gastronomy is the trend dubbed ‘casual fine dining’. The MICHELIN Guide Switzerland 2019 once again lists many terrific establishments where diners can enjoy top-notch cooking in a relaxed, easy-going ambience, a concept that is particularly relished by younger customers.
The number of restaurants awarded a Bib Gourmand increases to a total of 157, including 26 new additions. Marktküche in Zurich is the first vegetarian restaurant in Switzerland in this category. Symbolized by the Michelin Man licking his lips, the Bib Gourmand highlights establishments that prepare simple yet skillful dishes offering good quality and good value. In Switzerland, a three course meal (starter, main, dessert) must be available for a maximum of 70 Swiss Francs.
In Switzerland, the MICHELIN Guide 2019 will go on sale from 8 February. It is available for 33 Swiss Francs (€29.95 in Germany and €30,80 in Austria).

With 118 Michelin-starred restaurants in the MICHELIN Guide Switzerland 2018, an increase of 40% in ten years, Switzerland confirms the vitality of its gastronomy Michelin is pleased to unveil the new MICHELIN guide Switzerland 2018, which has a total of 118 Michelin-starred restaurants.
“The standard of Swiss cuisine continues to be particularly high: Switzerland is still the country with the most Michelin-starred restaurants per capita,” says Michael ELLIS, International Director in charge of the MICHELIN guides. “In less than ten years, the quality of the gastronomy has steadily improved, with the number of star-rated restaurants increasing by 40% between 2008 and today”.
All the three-star restaurants in the previous selection retain their awards this year: B. Violier – Restaurant de l’Hôtel de Ville in Crissier, Schauenstein in Fürstenau and the Cheval Blanc by Peter Knogl.
This year’s new selection in the MICHELIN guide awarded Einstein Gourmet in St. Galle two stars, where chefs Sebastian Zier and Moses Ceylan, both from Germany, serve a creative cuisine that is full of flavour in a sophisticated setting overlooking the city. The Taverne zum Schäfli, housed in a lovely half-timbered house in Wigoltingen, in the Canton of Thurgau, has also been awarded two stars: taking over from his parents only two years ago, the young chef Christian Kuchler offers high quality remarkably precise cuisine, in which every dish is put together with both finesse and creativity.
Fourteen new restaurants have been awarded one star in the MICHELIN guide selection for 2018, including The Japanese Restaurant, located in the hotel The Chedi in Andermatt (UR) serving authentic Japanese dishes, and the IGNIV by Andreas Caminada restaurant in St. Moritz. Chef Andréas Caminada, whose Schauenstein restaurant has three stars, has expanded into St Moritz with the restaurant concept that already earned him a star the year before in Bad Ragaz: a cuisine rich in flavours with dishes to share in a relaxed setting.
Locanda Barbarossa in Ascona (TI), Löwen-Apriori in Bubikon (ZH), Tosca in Geneva, La Table du 7 located in La Chaumière by Serge Labrosse in Geneva / Troinex, Stiva Veglia in Ilanz / Schnaus (GR), Weiss Kreuz in Malans (GR), Café Berra in Monthey-Choëx (VS), Regina Montium in Rigi Kaltbad (LU), Die Rose in Rüschlikon (ZH), Table de Mary in Yverdon-les-Bains / Cheseaux (VD) and Rigiblick in Zurich also receive one star in the new selection.
The Principality of Liechtenstein hosts its second MICHELIN-starred restaurant with Torkel, a historic house among the vineyards offering classic cuisine.
In total, the MICHELIN guide Switzerland now has 96 one-star restaurants. Finally, evidence of the increasing success of the Bib Gourmand, which is increasingly coveted by chefs and is popular with the public too, the MICHELIN guide has 153 Bib Gourmand establishments, 30 of which are new this year – double the number ten years ago! Symbolized by a representation of Bibendum (Micheline Man), the Bib Gourmand rewards establishments serving a full high quality menu (starter, main course, dessert) for a maximum of 70 Swiss Francs.
Because simply being selected for the MICHELIN guide is in itself synonymous with quality, a new distinction has been included in the MICHELIN guide Switzerland 2018 this year: the Assiette Michelin (Michelin Plate). Symbolized by a plate and cutlery, this award is attributed by inspectors to restaurants in the guide that have neither a Bib Gourmand nor a star.
It means “quality produce and skilful chef: quite simply a good meal”. The MICHELIN guide Switzerland 2018 will be available from 13 October for 33.00 Swiss francs in Switzerland, €29.95 in Germany and €30.80 in Austria. This new selection lists a total of 931 restaurants and 514 hotels in all comfort and price categories, including:

Avec 118 restaurants étoilés dans le guide MICHELIN Suisse 2018, soit 40% de plus en dix ans, la Suisse confirme la vitalité de son offre gastronomique Michelin est heureux de dévoiler aujourd’hui le nouveau guide MICHELIN Suisse 2018, qui sélectionne un total de 118 restaurants étoilés.
« Le niveau de la cuisine helvète demeure particulièrement élevé: la Suisse reste d’ailleurs le pays qui compte le plus grand nombre de restaurants étoilés par habitant » confie Michael ELLIS, Directeur international des guides MICHELIN. « En moins de dix ans, la qualité de l’offre gastronomique n’a cessé de croître, le nombre de restaurants étoilés augmentant de 40% entre 2008 et aujourd’hui ».
Tous les restaurants distingués de trois étoiles dans la précédente sélection conservent leur récompense cette année: B. Violier – Restaurant de l’Hôtel de Ville à Crissier, Schauenstein à Fürstenau et le Cheval Blanc by Peter Knogl à Bâle.
Cette année, la nouvelle sélection du guide MICHELIN distingue de deux étoiles Einstein Gourmet, situé à St. Galle, où les chefs Sebastian Zier et Moses Ceylan, tous deux originaires d’Allemagne, proposent une cuisine créative et pleine desaveurs orchestrée dans un décor sophistiqué qui of fre une vue sur la ville. Le restaurant Taverne zum Schäfli, logé dans une ravissante maison à colombages à Wigoltingen, dans le canton de Thurgovie, obtient également deux étoiles: succédant à ses parents il y a tout juste deux ans, le jeune chef Christian Kuchler propose une cuisine à la qualité et à la précision remarquables, où chaque assiette est élaborée avec finesse et créativité.
Quatorze nouveaux restaurants se voient attribuer une étoile dans la sélection 2018 du guide MICHELIN, dont The Japanese Restaurant , situé dans l’hôtel The Chedi à Andermatt (UR) et qui propose d’authentiques plats japonais, ou encore le restaurant IGNIV by Andreas Caminada situé à St. Moritz. Le chef Andréas CAMINADA, dont le restaurant Schauenstein est distingué de trois étoiles, étend à St Moritz le concept de restaurant qui lui avait déjà valu une étoile l’année précédente à Bad Ragaz: celui d’une cuisine riche en saveurs où les assiettes se partagent dans un cadre décontracté.
Locanda Barbarossa à Ascona (TI), Löwen – Apriori à Bubikon (ZH), Tosca situé à Genève, La Table du 7 située dans La Chaumière by Serge Labrosse à Genève/Troinex, Stiva Veglia à Ilanz/Schnaus (GR), Weiss Kreuz à Malans (GR), Café Berra à Monthey-Choëx (VS), Regina Montium à Rigi Kaltbad (LU), Die Rose à Rüschlikon (ZH), Table de Mary à Yverdon-les-Bains/Cheseaux (VD) et Rigiblick à Zurich sont également distingués d’une étoile dans cette nouvelle sélection.
Quant à la Principauté du Liechtenstein, celle-ci accueille son deuxième restaurant étoilé avec Torkel, une maison historique logée dans les vignobles qui propose une cuisine classique.
Au total, le guide MICHELIN Suisse compte désormais 96 restaurants une étoile.
Enfin, preuve du succès croissant de cette distinction de plus en plus convoitée par les chefs et plébiscitée par le grand public, le guide MICHELIN Suisse compte 153 établissements distingués d’un Bib Gourmand, dont 30 nouveaux cette année: c’est deux fois plus qu’il y a dix ans! Symbolisé par l’effigie de Bibendum se pourléchant les lèvres, le Bib Gourmand récompense les tables servant un menu complet de qualité (entrée, plat, dessert) pour un maximum de 70 francs Suisse.
Parce que le simple fait d’être sélectionné dans le guide MICHELIN est en soi synonyme de qualité, une nouvelle distinction a été intégrée cette année dans le guide MICHELIN Suisse 2018: l’Assiette MICHELIN. Symbolisée par une assiette et des couverts, cette récompense attribuée par les inspecteurs du guide MICHELIN à l’ensemble des restaurants sélectionnés dans le guide qui ne sont ni distingués d’un Bib Gourmand, ni étoilés, signifie: « qualité des produits et tour de main du chef: un bon repas tout simplement ».
Le guide MICHELIN Suisse 2018 sera disponible à partir du 13 octobre au prix de 33,00 francs en Suisse, de 29,95 euros en Allemagne et de 30,80 euros en Autriche. Cette nouvelle sélection répertorie au total 931 restaurants et 514 hôtels dans toutes les catégories de confort et de prix, dont notamment:
