Was born within the four stars Hotel Antico Borgo di Sutri, located in Sutri, in the Viterbo countryside, in Tuscia, in a magical place, which retains the ancient spirit of its land, a few kilometers from Rome. The property of the venue, Francesca Pozzi and Federico Fortin and the management, Riccardo De Santis, strongly believe in the gastronomic project and focus on an autonomous identity, although contextualized in the structure of a hotel .
The restaurant is built around the executive chef Simone Lezzerini who joins our project starting from February 2023, after some significant high-level experiences in Michelin starred restaurants. Simone has collaborated at the project of Enoteca La Torre with Domenico Stile chef, 2 Michelin stars and at the brigade of Davide Pulejo chef, 1 Michelin star. The cuisine that expresses Simone is a local cuisine linked to the research and processing of local ingredients and raw materials, with innovative combinations and techniques.
The kitchen brigade is very close-knit and consists of 6 people, 1 executive chef, 1 sous chef, 2 heads match, 1 pastry chef, 1 commis. Each person of the team contributes with his commitment to the creation of a menu of excellent quality, sharing common values and inspired by fresh raw materials, perfectly related to the season, as we want our guests to have the opportunity to taste dishes to the maximum of their gustatory expression. We have made quality, taste and flavors our mission and we have noticed how customers are increasingly inspired by our gourmet restaurant tasting path.
