New Chef in the Restaurant L’Armançon
We are happy to welcome our new chef, Alexandre Clochet-Rousselet!
After several years in Michelin-starred establishments such as the Relais Bernard Loiseau (2*) or the Pressoir d’Argent – Gordon Ramsey (2*), Alexandre has chosen to return to Burgundy and we are lucky to have him at Hôtel Golf Château de Chailly.
One of Alexandre’s first commitments is to work with local products to which he is very attached. Inspired by the seasons and the terroir, he likes to revisit Burgundian dishes with great finesse and a lot of creativity.
“My goal in the kitchen is to work with regional products and highlight the producers.
I like to revisit the great classics of Burgundy cuisine, to create a gourmet dish. One of the signature dishes on the current menu at the restaurant is the “pochouse”, a typical Burgundian dish made with freshwater fish.
Being a native of the region, the products and the terroir are a great source of inspiration for me. Some dishes are sometimes made on my childhood memories!
My cooking is focused on taste, gluttony and I want to remove the superfluous from the plate to focus on flavor.”

The Restaurant L’Armancon is open for lunch and dinner from Tuesday through Saturday.

Our Brunch is served from 11:30 a.m. to 2:30 p.m. every Sunday at the Restaurant l’Armançon or at the Salon De Loges. When the beautiful days arrive, we will welcome you in the inner courtyard of the castle for the Brunch service!
Re-opening of our Bistrot Le Rubillon
We are delighted to announce the re-opening of our Bistrot Le Rubillon!
Le Bistrot Le Rubillon is located in the former kitchen of the castle, under a vaulted stone ceiling. During the summer, enjoy your dinner on the terrace with views of the pool and the golf course!
The Bistrot is open for dinners, Thursdays through Mondays, and you will find local products and dishes such as local cold-cuts, cheeses, Burgundy snails, Bresse poultry…and much more according to the Chef’s inspiration!

Our spa practitioner welcomes you from Wednesday to Sunday, from 10 a.m. to 7 p.m. in our Spa Vinésime & Charme d’Orient for a moment of relaxation during a treatment or massage.
It will be necessary to wait until May for the opening of the outdoor heated swimming pool but you can take advantage of the jacuzzi, the sauna and the steam-room, accessible all year round!
The 18-hole golf course is slowly blooming with the arrival of spring, don’t hesitate to conquer it and challenge the golf course! If necessary, after this winter break, our golf pro can help you find the right gestures and the right techniques during a lesson.
You are not a golfer? Our golf pro can help you discover this sport during an initiation. He will introduce you to the equipment, the course and the different aspects of the game!
For your lunch, you can order from our Food Truck which will be operational, weather permitting at the golf clubhouse.
